A half hour in the car to the train station, a 90-minute train ride, and a 15-minute walk later – I was at work! Whew!
I promptly put my stuff down at my desk after greeting my co-worker and headed straight for an iced coffee!
With soymilk of course!
I was actually able to sleep most of the train ride so I didn’t feel all that exhausted – but I figured getting a coffee would be smart just to be on the safe side.
Lunch today was sOoOoOo good!
I packed a panko breaded tilapia filet that I put over a huge bed of romaine, mixed greens, shredded AND baby carrots, cucumbers, red cabbage and a delicious hunk o’ multi-grain bread.
Once doused with a little balsamic vinaigrette, I was happily munching away! This meal definitely had the kind of chew that Kath would be proud of!
