It’s raining cats and dogs out there!
Luckily I noticed it before I left the office and was able to grab my umbrella otherwise I would’ve gotten S.O.A.K.E.D! (Poor Mike was not quite so lucky and suffered a wetter fate!)
Once home and safely in my dry apartment I changed into some cozy sweats and started in on dinner. I wasn’t sure what I wanted and hadn’t planned anything out so I just started pulling things from the fridge. Sometimes these make the best meals…and other times, not so much. My lucky streak continued though and this turned out okay!

I put together a simple quesadilla and filled it with some hummus, salsa and a LightLife Chick’n Smart Tender. Then I made some homemade guacamole for dipping.
To make the guacamole I just mixed half an avocado with the very last of the salsa and viola! Super easy and delicious

I REALLY liked the LightLife savory chick’n flavor. I’ve tried the lemon pepper flavor in the past and was not a fan so I was hesitant to try these, but happily, I was pleasantly surprised and would definitely recommend them!

In my scrounging I also came upon a yam that was on it’s way out so I threw it in a pan with some green and yellow zucchini and roasted it up in the oven to have as a side.

The zucchini was not good – I didn’t eat it. But the yam was great so I just added the rest of that to the plate (hah! I rhymed!).
When I roast vegetables I usually just brush them with olive oil and sprinkle on some salt, pop them in the oven on about 400* for 40 minutes (flipping halfway through) then broil them for the final 5 minutes for extra crispness!
I’m off to take a nice after dinner stroll with Mike (would you believe I was actually able to persuade him into a 20 minute run with me last night?!) as the rain has let up for the moment and I want to take advantage! Maybe we’ll just *happen* to stroll upon an ice cream place?!

I’m loving this quesadilla idea. The mishmosh thing is one of my favorites. I actually love to toss in salad fixin’s with leftover rice or cracked bulgur wheat. Chopped tomatoes, onions, broccoli, cukes, whatever! And then toss it in with your rice, oil + Vin (for that sour taste that’s so good on grains!). And if you have them tuna or beans from the can. MMMMM. I love “pullin’ from the fridge”.
Oh my gosh that literally just made me salivate for a huge throw-everything-in-a-bowl-salad!! I’m thinking you’re going to see that on here verrrry soon!
