Afternoon!

I’m glad you all enjoyed the Mike and Caitlyn antics that all of our friends always have to put up with!  Haha.  We love to tease each other but it’s always all in good fun

Breakfast this morning was a simple egg white wrap -

Sadly my coffee came out a little weak…I wonder what went wrong since I made it the same way I always do?

Oh well – the foam was still delicious!

I followed breakfast up with…

LUNCH!

I know, go figure right??

I threw together a pretty yummy salad -

  • 5-lettuce mix
  • 1/2 a Don Lee Farms veggie burger (these are the ones a couple of you were asking me about before)
  • 1/2 a hard-boiled egg
  • Black beans
  • Cucumbers

I LOVE using veggie burgers in a salad because it’s such an easy way to get TONS of veggies without all the chopping!

Sometimes the simple meals are the best. Wrap + egg sounds fab.

I love putting veggie burgers in salads too! Adds so much yummy goodness it’s untrue! Sad face for your coffee – maybe the beanz are getting old? That’s usually when my french press starts to taste a little blah.

I think i need another wrap in my life soon. I think veggie burgers are so good, where did you purchase these burgers? I need to look into that brand.

Nicci – I actually got them at Costco…word on the street is that they’re very difficult to find and Costco seems to be the only place people can find them! I didn’t know I was purchasing such a gem at the time but MAN am I glad I got them! Good luck!

Ok–Dr. Praeger’s veggie burgers in salads=ahhhhh-mazing. They legit have whole lima beans and corn kernels in the burgers… just throwing that out there

Kristen – Yay! Me too! I couldn’t WAIT to bake with apples and pumpkin! I liked it because it wasn’t as sweet as a cake or dessert bread so it’s totally manageable for a breakfast. I’m DYING to try your chocolate hazelnut bites (I even watched your video – it was SO good! Totally would’ve voted for you on the Next Food Network Star! Haha!)
