Helloooooooo Everyone!
I apologize for my absence these past two days. As I said, things are a little crazier now so I won’t get to blog every day like I would like, but I promise to try to check in as much as my time allows!
This morning started out beautifully. A did a nice 50-minutes of yoga to stretch myself out and then started in on a lovely breakfast:

A LARGE cup of coffee with foamy soymilk -

And a breakfast wrap with a delicious new twist – Morningstar Farms Veggie Sausage!

SO good. I love how they flavor the patties!

Lunch was frantically inhaled as I was rushing home to pack my stuff to leave for BOSTON! My sister is verrrry close to giving birth so we’re all keeping our fingers crossed that it comes soon!
I threw together a turkey wrap with lettuce, mustard, pickles and cucumbers and inhaled it while throwing things into a suitcase -

Of course, because I was rushing it completely ripped apart -

Because that’s just the way things go when you’re rushing, right!?
I also crunched into a huge gala -

This lunch was good…from what I remember of it!
Then it was sprinting out my apartment, on to the PATH, out of the PATH, up the street to Penn Station, to the ticketing booth and onto the train with LITERALLY 2 minutes to spare!! It was totally nutso!
But at least I made it!
Towards the end of the 4+ hour train ride I found myself getting a little hungry again and broke into another Kashi Pumpkin Pie little chewy -

And another gala (not pictured).
Dinner followed shortly after arriving and was made by my fabulous brother-in-law! Julia and I had story time while waiting for it to be done:

She’s so freakin’ cute.
Anyway – back to dinner. Ethan whipped up all the fixin’s for delicious burritos!
Red peppers -

Ground turkey with tomatoes and spices!

Black beans (my favorite)

Actually I owe my love of black beans to my sister and brother-in-law as they were the ones that introduced me to their wonderfulness! Now I can’t imagine life without them.
And finally – lime infused basmati rice!

Wrapped and rolled in a TJ’s plain tortilla -

YUM!
Julia thoroughly enjoyed her black beans -

Unfortunately most of them didn’t actually make it in her mouth!

HAHAH. What a cutie.
C’mon baby! We’re ready for you!!
Time for Fringe and then the Office with the sisters and brother-in-law!
Night all!

Hey Lizzy…I think it’s the wraps I buy. They make it so easy! But I just fold the two edges inward then roll down from there!
Good luck with the baby! Julia is adorable…and it’s good you explained the beans in that last picture, so they aren’t mistaken for something else
Jen – Hahaha! I know. That’s exactly what we all said. We were like “wow…that could DEFINITELY look like something else!!” Hahah
Adorable!! We made lime infused rice the other night as well. Yummy!
Such a sweetie pie! How exciting that you will soon have a new niece or nephew!!
Jen – I know!!! I can’t wait!
How exciting!! I love playing with my nieces and nephew- do they know boy or girl?
I Really want to try those sausages!
Katie – First of all. DEFINITELY get the sausages! They’re SO good. Second of all, they’re pretty sure it’s a girl but the last ultra sound was a little fuzzy so we don’t know for certain! I can’t wait for it to finally get here!
Umm, Cait? Did you know the lettuce in your turkey wrap exploded?
Josie – Haha yes! And at the least convenient time EVER!!
Oh welcome to Boston! Have a great time and good luck to your sister!
Thanks Traci! It feels so good to be back!
Yum! Those tacos look great. I love black beans too.
