Hey Guys!
I just came back to my computer and realized that my lunch post never published this afternoon…and when it DID finally publish, it was all messed up!
Does anyone else have a lot of trouble publishing in wordpress? I find when I don’t use ecto everything gets misaligned! Anyone know what I can do to fix this?
This afternoon I snacked on a Nutz over Chocolate Luna bar

And then I came home and banged out a GREAT run. I don’t usually like to run two days in a row (as a long-time runner I’m plagued with old ankle/foot/hamstring/hip flexor injuries) because I find it’s easier on my legs and plus it makes me appreciate my runs more. Tonight was just such a gorgeous night for December that I knew I would regret it if I didn’t take advantage of when I’m doing my runs in the snow later on!
Distance: 5.776 miles
Time: 50 minutes, 13 seconds
It ended up being fantastic! The first 10-15 minutes I wasn’t feeling too great about it, but once I got into the meat of it I found my pace and felt really good.
I followed up my successful run with a delicious dinner of Baked Tofu -

It’s so easy and so delicious.
All I do is buy a block of Firm or Extra Firm Tofu then I…
- Slice the block in half
- Slice each half in 3rds
- Coat each side with a little olive oil and salt (or seasonings of choice)
- Bake each side for 15-20 minutes on 475 or until lightly browned
And you’re done! So good and SO worth it. Sides were broccoli with hummus and a sweet potato -

Absolutely DELICIOUS.
I’m off to make some tea and watch some TV!
