(Three) Apples a Day Keeps the Doctor Away

Hello There Blog People!

I hope this Wednesday has treated you all well – there’s nothing better than knowing we’re more than halfway through this week!

I woke up after a GREAT night’s sleep and made myself a fabulous breakfast -

Quaker Oatmeal Squares, an apple and a foamy coffee with soymilk

This baby was not only delicious, but it kept me full for HOURS. Which ended up being a good thing as I had a crazy busy morning! I ran around the office like a chicken with my head cut off until about 12:30 when I finally sat down and dove head first into my lunch!

Hummus and veggies galore on Joseph’s lavash wrap with an apple (can ya tell I’m running low on fruit??)

I literally piled up EVERY LAST veggie that I had in my fridge and stuffed it into my wrap. The load included:

  • Baby carrots
  • Celery
  • Cucumbers
  • Romaine Lettuce
  • 1/4 cup of hummus

Not that I even have to say this, but this fiber-rific lunch definitely did the trick in filling me up!

During lunch I also managed to squeeze in an activist moment!

I signed Jamie Oliver’s Food Revolution Petition and received a thank-you from the man himself

I also read a few blogs on my google reader during my 30 minute lunch break and after doing so I had one thing and one thing only on my mind for dinner -

I used soymilk and they came out SO thick and fluffy!

So satisfying

Mike and I did end up getting ice cream last night to eat while we watched Precious (which was SO GOOD by the way! Definitely recommend it!) and I just couldn’t resist dipping back into my vanilla frozen yogurt cup after dinner for a couple more bites (with some crumbled Clif bar on top of course!)…

and yay for all the apples. i LOVE crunchy apples!

i watched precious a few weeks ago. i agree – it really good but dang, it was kind of sad and depressing too that some people really do live like that.

quaker oatmeal squares are a cereal i always wanna pick up but never do. seeing how much everyone in the blog world loves ‘em, i should give it a go – especially now that the weather’s warming up and i still need my oatmeal fix!

Oh my gosh, I want pancakes for dinner!!!! I’m doing it tonight, yummmmy. I want to dip them, too – I don’t know why I’ve never done that.

I haven’t seen Precious but I’ve heard great things!

I never knew that soy milk would froth like that – great to know!! I love soy/almond milk but haven’t ever tried frothing them for coffee. yum!
