HOORAY! Only one more day left in this week and then it’s the WEEKEND!
This week actually flew by for some reason – I was shocked that today was already Thursday…I could get used to weeks like this!
I woke up and wasn’t all that hungry so I just had a small mug of cereal with soymilk and a vitamin water
Kashi Go Lean w. soymilk and VitaminWater Zero
This did the trick and filled me up well. I took a HUGE COFFEE to go which I drank throughout the morning
Today wasn’t quite as crazy as yesterday, but I was still pretty busy throughout the majority of the morning. Around 12:30 my stomach started growling and I was at a good stopping point in my work so I took a walk with my co-worker Michelle to our favorite salad place -
It feels like it’s been SO long since I’ve had a huge salad from here so I was quite excited
It was a beautiful day out so we took advantage of it and took a walk to the fountain so I could take my pictures and we could soak up some of that good ol’ vitamin D!


My mix included:
- mixed greens
- avocado
- broccoli
- carrots
- celery
- cucumbers
- egg white
- grilled chicken
- balsamic vinaigrette

SO delicious. Both Michelle and I agreed that this salad tasted like the best thing ever. I could seriously eat this salad every day – but my wallet would not be so happy about that!
This is one filling salad though – dare I say even MORE than my vegg-irific wrap yesterday!!
Late-afternoon I snacked on an apple to carry me through the rest of the day

I planned to come home and do a nice relaxing yoga session, but to my surprise, when I got there, MIKE asked if I wanted to go for a run!
I was so excited I literally tripped over myself to get ready and go. He RARELY wants to run with me (or at all), so when he suggested it, I was all for it!
I did a nice 5-miler on this beautiful night – 2.5 of which Mike accompanied me for. It doesn’t get much better than that!
I finished up my run while he went home and showered and then it was time for dinner. Mike dug into the leftover pancakes from last night and I came up with this beauty (inspired by yesterday’s lunch)

Hummus and veggie wrap and apple pie yogurt w. 1/2 a diced apple thrown in
The wrap was delicious and once again WAY overfilled with veggies! I just can’t control myself with them – they make everything look so bright and pretty

I also dug into a new yogurt that I picked up - Light n Fit’s Apple Pie that I diced half a real apple into


Honestly – this wasn’t my favorite flavor. A little too sweet for my liking. I probably wouldn’t buy it again but it did give me a good idea for making my own apple pie flavor using plain or vanilla greek yogurt!
Now that we’re fed, it’s time for Mike and I to crawl into bed and get ready for 30 Rock and The Office!
