How is tomorrow not Saturday??
Is it just me or is this week feeling crazy long? And I had Monday off so I can only imagine what all of you are feeling!
Anyway, despite it being Thursday (sorry Katie, I know it’s your favorite day) today turned out to be a pretty good day.
I woke up, dragged myself out of bed and scrambled up some eggs:

1 egg + 1 egg white. For some reason I really just had a hankering for scrambled eggs. It’s usually a weekend meal for me so it was a nice treat for a weekday morning.

Mid-morning I was more than ready for my carbs and I greedily sliced up my juicy pear and dug in:

Don’t let that blemish on the skin fool you – this thing was GOOD. Just the perfect amount of juiciness to crispiness ratio. I find it’s hard to get a pear JUST right. If you leave it out too long it’s almost mushy but if you don’t get out of the fridge enough time before eating it, it’s almost too tough to eat.
Long story short – this little guy was just right.
The rest of the morning was pretty busy and it was well after noon before I realized I was hungry for lunch!

I ran down to the cafe and threw together a quick salad and grabbed an orange -

Spinach, mixed greens, kidney beans, onions, carrots, 1/2 an egg, broccoli and cucumbers all loaded up with balsamic vinegar and oil.
I’m not gonna lie – I didn’t have such high hopes for this salad but it was quite good. I’d be happy to replicated it again any day.

The orange wasn’t so bad either
By 4:30 I was pretty hungry again and broke into my afternoon snack:

Baby carrots and peanut butter.
If you’re one of those people who haven’t yet tried this combo, I urge you to do so. It’s really a great mix of flavors and it’s a nice change up from the usual apple/peanut butter pair.
Speaking of pears, they also go great with peanut butter.
I also ate an apple but it didn’t make it on camera.
As I was walking home I realized it was a pretty beautiful night and I immediately decided I was going to go for a run upon returning home.

I needed to go to the grocery store anyway so that gave me the extra motivation (not that I needed it!) to get out there.
The run was a success, I made it 25 minutes with no back pain OR numbness in my leg!
Could this be the return of my running career?? I sure hope so.
While I was at the store I took the easy way out and grabbed some sushi for dinner:

Vegetable sushi with brown rice and garden spring rolls.

This meal just never lets me down. It’s light but filling and most of all, it’s completely delicious
TOMORROW IS FRIDAAAAAAAAAAY!
