Seven Layer Bars

If you guessed that I was making Seven Layer Bars, then you were right!

I’ve always wanted to make these and when Swanson Vitamins approached me with an offer to try out some of their products for free, I immediately added the Swanson Certified Organic Unsulphured Coconut Shreds to my basket!

The first step for Seven Layer Bars is to toast the coconut.

Holy moly. The entire house smelled SO wonderful after just 4 minutes toasting in the oven. Even Mike who’s not a huge coconut fan remarked “What smells so good?”

I toasted a small amount extra so I could get a taste on it’s own and my oh my was it good. It’s funny because I’m not usually big on coconut by itself, but the toasting brought out the natural sweetness and added a slight crunch to it.

I definitely want to do this over oats one time!

After the coconut was toasted I gathered up the other 6 ingredients:

Using this recipe (followed exactly) I added each layer to the pan and in 25 quick minutes I had these babies:

These came out a bit more sloppy than I was hoping thanks to a sticky pan, but that didn’t change the amazing taste of them ONE bit!

I’m definitely going to be making these again soon!

How funny, my mom made these just last week!! I didn’t try them on account of sugar-free-july, but I told her that she has to make them for me again in August. ;-)

I have a funny side-note about 7-layer bars. My mom doesn’t like sweets… BUT for her birthday every year she requests that my grandma makes 7-layer bars for her. And she only shares tiny slivers! Since I don’t live at home I haven’t even gotten my little slice in a couple years. I love them tho!! Maybe I’ll just have to make them myself
