Despite my rather filling (and delicious!) breakfast I was hungry pretty early for some lunch!

And, as has been my pattern recently, I craved one thing and one thing only:

This. salad. was. AWESOME.
- Baby romaine
- Amy’s Light in Sodium California Veggie Burger
- Edamame
- Avocado
- Gogi berries
- Raisins
- Walnuts

Holy goodness. Words can’t describe how amazing this tasted.
I literally INHALED it.
My very last peach completed the meal:

And now I’m off to spend some time at the gym! I’m going to be spending a lot of time in the car very soon as I head up to Vermont so I better get all my energy out while I can

Absolutley gorgeous as usual!
Vermont sounds fun! I bet there’s lots of gorgeous places there~
I know I can’t wait to be there for all the photography opportunities!
Safe trip!
Thank you!
Avocado and edamame sounds like an amazing combo!
It’s seriously the best.
have fun in Vermont! Salads sound so good during the summer but I’m allergic to lettuce (so odd, I know)
Oh my gosh really?! I don’t think I even knew that existed as an allergy! What a bummer
I love salad in the summertime too! Sad that it’s your last peach. Hope you come home from Vermont with some good fruit
You and me both!
That looks like an AMAZING salad!!
Have a safe trip!!
Thanks!
yum! Looks good. I have been eating peaches nonstop lately! Have a safe trip – I’ve been trying to get lots of exercise too, I’ll be sitting in the car for 10 hours driving to VA beach on monday!
Haha that sounds like me! Whenever I know I’m going to be sitting still for a long car ride I do my best to run my little leggies off beforehand
Happy Saturday!

need.
Put avocado on anything, and I’m a happy camper. Therefore, this looks deeeelicious.
Safe travels!
The avocado looks perfect! I’m more than disappointed when I cut one and see less than perfection. I haven’t tried goji berries but I’m sure they are great.
Beautiful images, Cait!
The reduced sodium burger sounds great…i am NOT a fan of added salt!
First off, the salad looks gorgeous and yummy!
Secondly, I can’t believe you say “Holy goodness!” I use that expression All. The. Time. and everyone looks at me funny. Yay! I will now send all of my family and friends to your blog for proof that this expression is incredibly valid.
Your salad looks amazing! I love that bowl too!
