Reese’s Peanut Butter Cup Brownies

by Cait on November 22, 2011

I like experimenting with brownies.  They make such a great base for other decadent flavors.

So I decided to go back to my beloved brownie base and create something truly evil delicious.

Chocolate.

Yum yum.

And so easy too.  I literally just grabbed my favorite boxed brownie mix, threw Reese’s Minis into the mix and baked it according to the box directions.

For the peanut butter ganache I used 1 cup smooth peanut butter + 1 tbsp shortening (for a nice sheen) then drizzled melted semi-sweet chocolate chips over the that.

Go ahead.  Go make these.  You won’t regret it :)

Reese’s Peanut Butter Cup Brownies

Ingredients:

For the Brownies:

  • 1 box of your favorite brownie mix (you can make your favorite scratch-made brownies too!)
  • 1/2 – 1 bag of Reese’s Minis
For the Ganache Topping:
  • 1/2 – 1 cup peanut butter (depending on how peanut buttery you want the ganache
  • 1 – 2 tbsp. shortening

Directions:

  1. Make the brownie mix according to box instructions.
  2. Add in 1/2 – 1 bag of Reese’s Minis (totally your preference on how much you want in there) to the mix and fold gently until well combined.
  3. Pour batter into greased pan (the size will be listed on the back of the brownie mix box).
  4. Bake the brownies according to the box instructions or until a toothpick comes out clean.
  5. When the brownies come out of the oven, allow to cool for up to a half hour.
  6. Meanwhile, combine peanut butter and shortening into a heat-proof bowl and place over a pot of boiling water.  Stir vigorously until all the shortening is melted and the mixture is glossy and smooth.
  7. Pour over cooled brownies and drizzle with additional melted chocolate (optional).

Reply

Cait August 27, 2012

Haha you’re not blind – it’s at the very bottom. I simply took my favorite brownie box mix, added half a bag of Reese’s Minis and baked according to the instructions. Then I topped with peanut butter and drizzled that with more melted chocolate :)

Reply

Joan Exner August 27, 2012

How many Reese’s minis should I put in?

I’ve never found a boxed mix that tastes very good but I do have a favorite triple chocolate brownie recipe that would make these out of this world!

Reply

Cait August 27, 2012

Definitely use it! The box mix is a time saver but you can’t beat the taste of homemade!

Reply

Cait August 27, 2012

Reply

Roxy C. August 27, 2012

As far as the ganache goes, do you just mix the peanut butter and shortening? Or how does it work exactly? First time doing these, but I definitely don’t want to mess them up! =)

Reply

Cait August 27, 2012

I would recommend doing peanut butter and shortening for that glossy look :)

Reply

Michelle August 27, 2012

Reply

Whatever your favorite type is! I used the Pillsbury® Chocolate Fudge Brownie Mix :)

Reply

Aubs Sal August 27, 2012

I’d make one suggestion to try….dark chocolate reese’s they now have and chop them up rather than using the mini’s…other than that, huge thumbs up

Reply

Oooh I like that idea! Thanks for the suggestion :)

I have a question. my daughter needs brownies for a key club bake sale and a friend showed me these. Obviously I can’t put the peanut butter on top because it will stick to the plastic wrap and make a mess but can anyone tell me of i drizzle which ever type of chips i decide to use will it harden enough when it cools to be wrapped and not make a smeared mess?

Reply

Cait August 27, 2012

They should harden just fine! These are delicious even without the topping though!

Making four boxes of these for big party tomorrow. Can I use margarine instead of shortening?? Or do I need a shortening like crisco?

Reply

Cait September 1, 2012

I’ve never tried with anything other than shortening (it just gives the peanut butter a nice sheen) but you could test it in a small amount (1 tbsp. peanut butter + 1 tsp. or margarine) and see if it works!

I just made these about 2 hours ago and my ganache is still super runny. I didn’t a little over a half cup of PB and a little over a tbsp of shortening… Is it supposed to be runny or did I do something wrong?

Reply

Cait July 8, 2013

Hmm, it will definitely be runny to start but should harden up slightly once it sits at room temperature. It doesn’t seem like you did anything wrong at all – it could be a number of factors (room temp, temp of ingredients, amount of mixing, etc). I would try popping them in the fridge for a bit to see if that helps! Sorry you’re having so much trouble with it!! :(

Reply

Pat Shoemaker July 25, 2013

How can I print receipies without 5 pages of pictures of the brownies before it ever gets to the receipe? I can’t wait to try these.

Reply

Cait July 25, 2013

Hmm – maybe just try copying and pasting into a word doc? I don’t think I have that recipe on my recipage so I don’t have a “print” option – I’m sorry!!
