Happy National Pancake Week!

I decided I should whip something up in honor of such an amazing week.
But not just anything would do.
Oh no.
It needed to be something special.
So I drew inspiration from my niece…

She’s pretty adorable.
And pretty special.
And I think she’s on to something there with all her colors…
So I took that inspiration into the kitchen.

And created something pretty great.

Rainbow Pancakes
Ingredients:
- Favorite pancake mix prepared to mix’s instructions (I used Bob’s Red Mill Whole Grain Buttermilk Pancake & Waffle mix)
- Food coloring
Directions:
1. Prepare pancake mix to mix’s instructions
2. Choose the colors you’d like to utilize and divide them up into separate bowls
3. Divide equal parts pancake mix into each of the separate bowls prepared with food coloring
4. Mix thoroughly
5. Cook
6. Enjoy!
