Happy Monday to you all – hope you all had a great weekend.
For those of you just catching up, mine was full of color (sadly, not the fruit & veggie kind, but I might argue these were more fun to make and eat anyway):
Peanut Butter Pretzel M&M Brown Rice Krispie Treats
While I would’ve loved to have kept the rainbow theme going throughout the week, I was sort of running out of creative ways to do it! So until next weekend, I’ll just have to settle for boring old non-rainbow food

But ya know what? It was pretty dang delicious so I guess I’m not complaining!
After Kath posted her Cait’s Plate-inspired waffle stack on Thursday, I couldn’t get it out of my head.
So a waffle stack it was this morning!
Made up of:
- 2 Kashi 7-grain waffles (I’m telling you, every time without fail as they toast all I can smell is CAKE!)
- 0% plain Chobani yogurt + chia seeds
- Sliced strawberries
- Sunflower Seed Butter
Polished off with coffee on the side
I was up early and off to the gym and knocked out 30 minutes on the elliptical plus my back exercises. My back has been acting up again lately so back to the elliptical it is for a while…hopefully I can get to a place where I can run consistently without it acting up!

I’m going to sip my coffee now, then head to the gym…..30 min on elliptical huh?? Eekkk, that is major sweat! Good for you!!

That waffle stack looks great!! This is a really random question–but how do you eat it after you finish all those photos?? I feel like the yogurt would get everywhere..lol
Hahah oh it’s definitely pretty messy. I just cut into it. Some of the yogurt blobs out the side but I just sweep it up with my waffle bites

Hahah – cereal with almond milk sounds pretty darn delicious to me!
I never thought to use yogurt like that! What a great substitute for whipped cream! This is definitely getting pinned on my “want to try” board!

Have you ever had any issues with food? I’m at a point where I need to gain weight but I’m not exercising. And eating carbs and grains (I definitely eat them) make me feel guilty…like i feel i should focus on protein and fat only; but I’m sick of that obsession. I want to be FREE like you.

Sorry about your back… I always think of injuries as a time to work out other parts of my body. Shin splint attack, no running for a while and time for some biking; back pain attack, no weight lifiting and time for some core work; etc. P.S. I need to get on chia seeds, everyone talks about them but I do not have a clue what they look like or taste like.

As for chia seeds, DEFINITELY get some! You can find them pretty much anywhere now a days – or even order them on Amazon! Bob’s Red Mill makes some but they’re kind of expensive (though the upside is you can probably find his in a regular grocery store versus a health food store). They don’t have much taste but the texture of them is FANtastic!
Actually, to clarify, the texture they add to things like yogurt and smoothies is fantastic. The texture of them themselves is not really anything too special.
Normally I buy the vans frozen waffles which i absolutely love but I think I might have to try the kashi variety. i need to test this cake claim! regardless of the smell, the picture looks fantastic, and definitely enough inspiration for me to throw these in my cart
