I finally got the chance to make one of Ashley’s Buckwheat Bakes!!

And let me tell you, they’re every bit as amazing as they sound.
This is definitely going into the breakfast rotation!

I based my buckwheat bake off of Kath’s version here because I was starving and knew I was going to have to take the microwave versus the baking route.
Cinnamon Apple Buckwheat Bake
Ingredients
- 1/2 cup buckwheat flour
- 2 tbsp raw buckwheat grouts
- 2 tbsp chia seeds
- 1 tsp cinnamon
- 1/2 tsp baking powder
- 1/2 tsp salt
- 1 egg
- 1 tbsp maple syrup
- 1/4 cup almond milk
- 1 tsp vanilla
- Medium apple, diced
Directions
- Mix all dry ingredients
- Mix wet ingredients
- Mix in diced apples and combine thoroughly
- Mix wet into dry
- Grease two ramekins
- Pour batter into ramekins.
- Microwave each one separately for 2 minutes, 30 seconds
- Flip onto plate and top away!

The warm apples completely made the bake. LOVED them.
With iced coffee on the side for this warm day!

- 1/2 cup buckwheat flour (ground raw buckwheat groats in the vita-mix)
- 2 tbsp raw buckwheat grouts
- 2 tbsp chia seeds
- 2 tbsp flax + 1/3 cup warm water, sit for a few minutes
- 1 mashed super ripe banana
- 1 tbsp maple syrup
- 1/4 cup milk
- 1 tsp cinnamon
- 1 tsp vanilla
- 1/2 tsp baking powder
- 1 tbsp cocoa powder
- 1/2 tsp salt [I think all baked goods need salt!]
Method
- Prepare flax egg.
- Mix all dry.
- Mix with into dry.
- Grease two ramekins (I used my Misto)
- Pour batter into ramekins.
- Microwave each one separately for 1 minute, 35 seconds
- Flip onto plate and top away!

I could live off of Ashley’s endless buckwheat bake recipes. There are so many amazing variations.

They’re just the unroasted, whole, raw, or white buckwheat kernels! They’re awesome!
