My Pick of Plates

Coming to my sister’s house is always so great because I have my pick from delicious plates of food at every meal!

After our 5 mile run this morning I was pretty darn hungry for lunch and lucky for me, my sister had something fully prepared and ready for me to devour!

Curry Tofu Stir-fry with Brown Rice and Mixed Veggies.

A perfect Cait’s Plate meal without having to lift a finger! ┬áLike I said, I’m a very spoiled girl ;)

I unfortunately don’t have the recipe for this but I’ll try to wrangle it out of my brother-in-law.

At the base of it though was just extra-firm tofu (my favorite is Nasoya) pressed and drained then diced up into cubes.

From there, stir-fried the cubes of tofu in a little olive or canola oil with your flavoring of choice (this seemed to be curry), mixed veggies (roasted red peppers, yellow peppers and snap peas) all served over brown rice.

Julia is obsessed with all things Halloween – so year-round her entertainment of choice are movies like Hocus Pocus, The Worst Witch, A Great Pumpkin Charlie Brown, etc.

What can I say…my nieces are weirdos!

Speaking of which, as soon as I pulled out my computer they requested making “funny faces”

This NEVER gets old to them!

I have an afternoon of babysitting ahead so who KNOWS what we’ll get into!

Seriously, those nieces are adorable, Cait! I love their creative spirit…I think when kids get hooked on a certain show or genre it shows character! love it

Food just ALWAYS tastes better when someone else makes it for you right!? This tofu was pretty darn delicious, I have to say! And thank you – I agree with you about how adorable they are…but I’m a little biased ;)
