You Are What You…Think?

Is it Thursday?

I’m all mixed up on my days.  Vacations will always do that to ya I guess…especially when you come back mid-week versus Sunday night.

But I’m not complaining!

If you follow me on Instagram or on Twitter, you probably saw my delicious dessert.

Somehow, despite having ice cream last night, I woke up wanting yogurt!  Actually, I woke up wanting one thing and one thing only: a waffle stack!

It’s been far too long since I’ve had one of these (like an entire week!).

I bought a fresh batch of strawberries yesterday (hooray for a semi-well stocked fridge again!) which were just begging to be used as part of this!

I toasted up 2 Trader Joe’s Multigrain Waffles…

then did the usual…

I carefully layered each waffle with:

  • 0% Plain Greek Yogurt + 1 tbsp chia seeds
  • Sliced strawberries
  • Natural peanut butter (still can’t bring myself to spend the big bucks on a new jar of sunflower seed butter…but boy do I miss it…)

Then all that’s left to do is dig in!

And dig in I did :)

A pretty great way to kick off a Thursday!

And with that, I’ll leave you with an interesting infographic I found on Pinterest about perception of health…kind of interesting!

Katie @ Talk Less, Say More May 17, 2012

You always have the prettiest breakfast photos. :)

And that infographic is really interesting…

Cait May 17, 2012

Aw thank you! And agreed! I guess perception has a lot more to do with it than we realize!

Laura @ Sprint 2 the Table May 17, 2012

I can’t believe that McDonalds’ chicken salad is the least caloric! AND 1/5 people think diet soda is healthy?! Craziness.

Cait May 17, 2012

I know it’s nuts when you actually look at what people outside the healthy living world think and eat!

That is such a neat chart! Thanks for sharing!

Of course! :)

Thank you!

Jasper {crunchylittlebites} May 17, 2012

the discussion of health and peoples’ perception of food/nutrition will never cease to fascinate me, especially in today’s culture of highly processed food…the discussion of labels/marketing/”organics” … topics for discussion are endless. thanks for sharing

Cait May 17, 2012

I completely agree. And you’re more than welcome!

Maura @ My Healthy 'Ohana May 17, 2012

Your waffle stack looks so yummy – I am loving strawberries right now :) The red and white in your photos is so pretty!

Cait May 17, 2012

I am too – they’re definitely at their peak! And thank you! :)

Bianca @ Confessions of a Chocoholic May 17, 2012

Mmm those waffle stacks look so good! I haven’t tried mixing chia seeds with Greek yogurt yet – great idea!

Cait May 17, 2012

It’s a great way to eat yogurt – it makes it so thick! :) Let me know if you try it!

Lauren May 17, 2012

I haven’t seen the waffle stack in awhile and I’m so glad to see it back. :)

Cait May 17, 2012

Haha – it was good to have it back! It had been far too long :)

Kerry May 18, 2012

Really interesting infographic, thanks Cait! I’m going to have to try to find waffles in my local supermarket – those strawberries look so lovely and juicy! Sadly its still pretty cool in the UK so no lovely ripe berries for us

Cait May 18, 2012

Oh boo! You could maybe buy frozen strawberries?! They’re nearly just as good on waffles, it’s what I did in the winter :)
