Is it Thursday?
I’m all mixed up on my days. Vacations will always do that to ya I guess…especially when you come back mid-week versus Sunday night.
But I’m not complaining!
Somehow, despite having ice cream last night, I woke up wanting yogurt! Actually, I woke up wanting one thing and one thing only: a waffle stack!
It’s been far too long since I’ve had one of these (like an entire week!).
I bought a fresh batch of strawberries yesterday (hooray for a semi-well stocked fridge again!) which were just begging to be used as part of this!
I toasted up 2 Trader Joe’s Multigrain Waffles…
then did the usual…
I carefully layered each waffle with:
- 0% Plain Greek Yogurt + 1 tbsp chia seeds
- Sliced strawberries
- Natural peanut butter (still can’t bring myself to spend the big bucks on a new jar of sunflower seed butter…but boy do I miss it…)
Then all that’s left to do is dig in!
And dig in I did
