Balanced Meals

I’ve been on a salad kick lately!

After all the traveling this past weekend, it just feels so great to have balanced meals, fresh veggies and fruit!

My breakfast was on the earlier side this morning (thanks to a certain someone who went to bed too early and thus woke up before 7) so I was counting down the minutes until noon when I could make lunch!

This salad did the trick perfectly.

Into the bowl went:

  • Mixed greens
  • Onions
  • Carrots
  • Avocado
  • Hard boiled egg
  • Edamame

Topped with Annie’s Balsamic Vinaigrette!

Paired with a perfectly ripe pear…

After a little digesting, I’m making my way to the gym!

I totally agree, it’s always nice to get back into your healthy eating routine after eating out a lot while on vacation :) That salad looks great, I love edamame!

This salad looks delicious!
I am out of town this weekend and am trying to bring along healthy snacks since I know we will be eating out more. It is always tough.

It definitely is – but the good thing is it makes you appreciate being able to make healthy meals for yourself when you get back!
