First off, thank you all so much for the Cait’s Plate birthday wishes! I honestly can’t believe it’s been 3 years. In some ways it feels like it should be much longer – I can barely remember a time before the blog!
I made a quick trip to the gym this afternoon and did a half hour on the elliptical + back exercises.
And refueled when I got home with an apple and almond butter -
Chad is training for a marathon and had a scheduled training run he had to get done so while he headed out, I got to work on dinner….a favorite of mine.
Starting with these guys:
I simply sliced them up and sauteed them in a little olive oil + salt & pepper. Once they softened a bit, I threw in some Trader Joe’s Andoulli Chicken Sausage:
Then sauteed the mixture until the chicken sausage browned nicely.
The final step was to top it all off with Arrabbiata Sauce (which means “angry” in Italian…which makes sense due to it’s heat!) and serve over whole wheat farfalle -
This dish definitely has a kick to it…but it’s so worth the nose-running-mouth-burning moments.
On the side we had some crusty whole wheat bread:
Dipped in olive oil + salt.
And some greens:
This whole meal was just as good as it was the first time I made it. A huge thanks goes out to my brother-in-law and my sister for introducing me to it!
