{vegan peanut butter banana whole wheat waffles with pb banana sauce}

Hi friends!

Sorry for the two week hiatus – I’ve been buried in summer school work and just haven’t had the time to get together a good blog post.  But I’m hoping these suckers make up for it!


I’m taking a biology course right now and one of my labs required EIGHT ripe bananas.  Truthfully, I could have cared less about the lab – I was just excited for it to be over so that I could bake with them (they were only used for ripening, don’t worry, I’m not using experimented-upon bananas in the recipes I share with you guys).


This recipe knocked out 3 of ‘em – 5 more to go!


These waffles were pretty darn good on their own, but as I was processing the bananas with the peanut butter soymilk and maple syrup, it struck me that making a peanut butter banana sauce to go on top of them would make them even better.


All I can tell you, is that I don’t like bananas and I ate this entire stack, sauce and all.


Whatever way you choose to serve them, sauce or no sauce, these are an awesome weekend brunch recipe that everyone will enjoy.

{vegan peanut butter banana whole wheat waffles with pb banana sauce} adapted from never homemaker

makes 9 waffles

ingredients for waffles:

  • 2 cups white whole wheat flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2 large, ripe bananas
  • 1/2 cup natural peanut butter
  • 2 tablespoons maple syrup
  • 1 tablespoon canola oil
  • 1 cup soy milk

directions for waffles:

  1. preheat waffle iron
  2. combine bananas, peanut butter, maple syrup and canola oil in a food processor and process until smooth
  3. in a separate bowl, combine white whole wheat flour, baking powder and salt
  4. add wet ingredients to dry and stir slightly just to combine.
  5. add soy milk and stir vigorously to combine (the batter should be thick but not dry, add additional soy milk as needed  to get appropriate consistency)
  6. add 1/3 cup batter to each section of the waffle iron and cook until just browned

ingredients for sauce:

  • 1 large banana
  • 1/4 cup natural peanut butter
  • a splash of soy milk

directions for sauce:

  1. add all ingredients to a food processor and process until smooth; add additional soy milk as needed to thin the sauce so it will pour.
